BLT Chicken Salad

A delicious lunch that tastes just like a BLT but without the bread!

Ingredients
  

  • 8 slices bacon
  • 3/4 cup avocado oil mayo
  • 3 green onions chopped
  • 1 rotisserie chicken cut into bite size chunks I use about 2/3 of it and save the rest for another meal
  • 1/2 cup cherry tomatoes sliced in half
  • Lettuce for serving
  • 1 tsp salt and pepper

Equipment

  • 1 Sheet Pan
  • 1 Chopping Knife

Method
 

  1. Line a baking sheet with parchment paper and preheat oven to 350 degrees
  2. Lay bacon flat on baking sheet and bake for 15 min or until desired crispiness
  3. Take apart rotisserie chicken and cut into bite size pieces
  4. Cut tomatoes and green onions
  5. When bacon is cooked, remove to a paper towel lined plate and then cut into bite size pieces
  6. Add all ingredients to a bowl and mix together
  7. Serve immediately by itself or on a bed of romaine lettuce
