BLT Chicken Salad

A delicious lunch that tastes just like a BLT but without the bread!

Equipment

  • 1 Sheet Pan
  • 1 Chopping Knife

Ingredients
  

  • 8 slices bacon
  • 3/4 cup avocado oil mayo
  • 3 green onions chopped
  • 1 rotisserie chicken cut into bite size chunks I use about 2/3 of it and save the rest for another meal
  • 1/2 cup cherry tomatoes sliced in half
  • Lettuce for serving
  • 1 tsp salt and pepper

Instructions
 

  • Line a baking sheet with parchment paper and preheat oven to 350 degrees
  • Lay bacon flat on baking sheet and bake for 15 min or until desired crispiness
  • Take apart rotisserie chicken and cut into bite size pieces
  • Cut tomatoes and green onions
  • When bacon is cooked, remove to a paper towel lined plate and then cut into bite size pieces
  • Add all ingredients to a bowl and mix together
  • Serve immediately by itself or on a bed of romaine lettuce
