Fast
This recipe comes together in 20 minutes, and that is only because you have to cook the bacon. If you substituted precooked bacon you could do it in 10 or less.
Time is always important because we have busy lives with a lot going on. And let’s be honest, this is only lunch, we don’t need to be slaving away for hours when we also have dinner and breakfast to figure out.
Paleo and Whole 30
This recipe meets Whole 30 and Paleo standards. The ingredients are only meat and veggies and mayo. To meet Whole 30 and Paleo guidelines you need to get avocado mayo. I get mine from Costco, the brand is Chosen Foods. I think Primal Kitchen makes one too.
Filling
Sometimes, healthy stuff doesn’t always hit the spot or fill you up. This does both of those things. I think the saltiness of the bacon and the heartiness of everything mixed together really satisfies all of those cravings we typically have.

Ingredients Needed for BLT Chicken Salad
Bacon
I buy real bacon, usually the kind with no sugar, and cook it myself. There is quite a flavor difference so I would highly recommend taking the extra 15 minutes to do this.
Rotisserie Chicken
This just makes everything easier. I take it apart while it’s still warm so it comes off the bones easier. You will get a decent amount of chicken and only need to chop it all up and you’re ready to go.
Cherry Tomatoes
Organic is best and grape tomatoes would work too. I wouldn’t substitute any other type of tomato as it will fall apart in the salad.
Green Onions
These add some green color and a little bit of extra flavor.
Avocado Mayo
Chosen Foods Mayo is my go-to, but Primal Kitchen makes a good one as well.
Salt and Pepper
How To Make BLT Chicken Salad
- Preheat your oven to 350 degrees.
- Line a baking sheet with parchment paper and lay bacon flat on it, bake for 15 minutes or until it is crispy.
- While the bacon is cooking, chop up the green onions and slice the tomatoes, take apart the rotisserie chicken, and chop it into bite-size pieces.
- Measure mayo into a large bowl and add the salt and pepper.
- Add the tomatoes, onions, and chicken to the mayo mixture.
- Take the bacon out of the oven and move to a paper plate lined with a paper towel to soak up any extra grease.
- Chop or break the bacon into small pieces and add to the mixture.
- Mix everything until all ingredients are well incorporated.
- Serve immediately by itself or on a bed of romaine lettuce.

BLT Chicken Salad
Equipment
- 1 Sheet Pan
- 1 Chopping Knife
Ingredients
- 8 slices bacon
- 3/4 cup avocado oil mayo
- 3 green onions chopped
- 1 rotisserie chicken cut into bite size chunks I use about 2/3 of it and save the rest for another meal
- 1/2 cup cherry tomatoes sliced in half
- Lettuce for serving
- 1 tsp salt and pepper
Instructions
- Line a baking sheet with parchment paper and preheat oven to 350 degrees
- Lay bacon flat on baking sheet and bake for 15 min or until desired crispiness
- Take apart rotisserie chicken and cut into bite size pieces
- Cut tomatoes and green onions
- When bacon is cooked, remove to a paper towel lined plate and then cut into bite size pieces
- Add all ingredients to a bowl and mix together
- Serve immediately by itself or on a bed of romaine lettuce
